Recipe -
Brioche hot dog buns served with shrimp and topped with green onions and chives. Green onions and lemons on the side, finely chopped ingredients served on white small plates.

Ingredients
1-1/2 lbs. Shrimp, peeled and deveined
Olive Oil
Kosher Salt
4 Brioche hot dog buns
3/4 Cup Mayonnaise
1 tbsp. Lemon Juice
1 tsp. Hot Sauce
2 Green Onion, thinly sliced, save a few for garnish
1 Celery Stalk, finely diced
1 tbsp. Minced Chives, save a few for garnish
Directions
  1. Preheat the grill over high heat.
  2. Thinly slice the green onion, celery, and chives. 
  3. In a large bowl, combine the mayonnaise, lemon juice, and hot sauce. Whisk well to combine. 
  4. Fold in the green onions, celery, and chives. Chill the mixture while you grill the shrimp. 
  5. Dry the shrimp and remove any water. Toss with a drizzle of olive oil and a pinch of salt. 
  6. Grill the shrimp for a couple of minutes on each side until slightly charred and cooked through. Remove the shrimp from the grill and allow to cool. 
  7. Meanwhile, turn the grill to low. Toss the buns on the grill for a few seconds to quickly toast. 
  8. Once cool enough to handle, chop each shrimp into 2-3 smaller pieces. 
  9. Add it to the mayonnaise mixture and toss really well to coat. 
  10.  Spoon the shrimp into the toasted buns. Garnish with a sprinkle of chives and green onions. 
  11. Enjoy!
